That is the whole of Chaoshan noodle cooking, and there is nothing to hide behind in a bowl built that plainly. Uncle works that style from a shopfront on Moncton Street, in the stretch where Steveston's commercial run starts giving way to houses.
Finding it in the village at all is the surprise. Steveston's food has historically run to fish and chips, pub plates and long-standing family restaurants, with the deeper regional Chinese cooking concentrated up in the Golden Village around No. 3 Road. A counter shop doing one specific southern Chinese noodle style down here says something about how the village has been shifting.
Treat it as a lunch or an early dinner rather than an evening out. Street parking on Moncton disappears on a sunny Saturday, so walking in from a few blocks north solves more than circling does. A weekday is quieter in every respect, and the boardwalk is two minutes away if you want to walk the meal off. Hours are not carried on this listing, and small kitchens in the village move their schedules between summer and the off-season, so check before making the trip.
